This rice dish is extremely easy to make if you have a rice cooker. Place all ingredients, except for Edamame Beans, in the rice cooker’s inner pot and press the button to start. I used only 1 can (120g) Sardines in Olive Oil. If you want to add more Sardines, you need to alter the amount of Water and Soy Sauce.

Ingredient

150 g

Shimeji

1 tablespoon

Mirin

2 tablespoons

Soy Sauce

1 can (120 g)

Sardines in Olive Oil

Cooking instructions

* Step 1

Wash Rice, drain, and place in the rice cooker’s inner pot. Add Water up to the 2-cups marking, add Dashi Powder.

* Step 2

Cut off the bottom of Shimeji, tear into smaller pieces, and spread evenly. Sprinkle with Soy Sauce and Mirin. Empty the can of Sardine into the pot, that means you add all the oil and liquid in the can as well.

* Step 3

*Note: If you use a larger size can of Sardines with more liquid, reduce the amount of Soy Sauce slightly as the liquid in the can is quite salty. If you use a can of Sardines in Brine, I recommend to drain the Brine and add 1 tablespoon Oil.

* Step 4

Press ‘COOK’ button to start cooking.

* Step 5

When the rice is cooked, scatter Edamame Beans, let steamed for 10 minutes.

Gently mix to combine. Sprinkle some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy. *Note: I added Crispy Chilli Oil as well, but it is optional.

I would be happy if I was served this dish at a restaurant. However, I am not willing to pay a lot of money for it as it is easy to cook at home. You only need a small can of Sardines in Olive Oil. Add Garlic, Lemon Juice, Whole Grain Mustard and Rocket. It won’t cost you too much.

Ingredient

1 can (120 g)

Sardines in Olive Oil

2 teaspoons

Lemon Juice

1 handful

Baby Rocket

Cooking instructions

* Step 1

Cook Spaghetti in boiling salted water according to the instruction on the package.

* Step 2

Drain the canned Sardines and place the oil and juice in a heat-proof mixing bowl. Add Garlic, cover with a plate, and microwave for 1 minute OR until boiled.

* Step 3

Add Salt, Black Pepper (OR Chilli), Mustard and Lemon Juice, and mix to combine. Break Sardines into the size that is easy to eat if large, and add to the bowl.

* Step 4

Add drained cooked Spaghetti and Baby Rocket, and mix to combine. Sprinkled with extra Black Pepper if you like, and enjoy. *Note: I added a slice of Lemon, which smell takes this dish to next level.

I am a big fan of famous Italian dish ‘Spaghetti Aglio Olio e Peperoncino’. However, it is not a very nutritious dish. I often add extra ingredients. Canned Sardines in Olive Oil is what I often add to the dish. You can use whole content. I can’t help adding a small amount of Soy Sauce to it, but it is optional.

Ingredient

1 teaspoon

Olive Oil

1 can (110 g)

Sardines in Olive Oil

Cooking instructions

* Step 1

Cook Spaghetti in boiling salted water according to the instruction on the package.

* Step 2

When Spaghetti are nearly cooked, heat Olive Oil and Garlic in a frying pan over medium heat. When aromatic, empty the can of Sardines into the pan, add Chilli, and simmer for a minute.

* Step 3

Add the cooked Spaghetti with 2-3 tablespoons salted water that has been cooking Spaghetti, and season with Salt & Black Pepper.

* Step 4

Add Parsley and mix to combine. I like to add a small amount of Soy Sauce at the end of cooking, but it is optional.

With 1 small can of Sardines, you can create a variety of dishes. I tend to use Soy Sauce to season canned Sardines, but I didn’t use Soy Sauce for this one. It’s a Tomato flavoured Spaghetti dish, almost identical to my Puttanesca dishes. Please use a can of Sardines in Olive Oil, so you won’t waste anything. This is a quick and easy recipe for 1 serving. Olives and Capers are optional, but I highly recommend to add them.

Ingredient

1 can (110 g)

Cooking instructions

* Step 1

Cook Spaghetti in boiling salted water according to the instruction on the package.

* Step 2

Tip the Oil and Liquid in the can of Sardines into a frying pan. Add Onion, Garlic and Chilli Flakes, and cook over medium low heat until Onion is soft.

* Step 3

Add Tomato and cook for a few minutes, season with Salt & Black Pepper, then add Olives, Capers and Sardines, and mix to combine.

* Step 4

Add cooked Spaghetti with some salted water that has been cooking Spaghetti, and mix to combine. Sprinkle with Parsley and extra Black Pepper, and enjoy.

One of the true ‘Super Food’ is Sardines. Fresh Sardines are not cheap in Melbourne where I live, but Canned Sardines won’t cost me much. You can make a rice bowl dish like this one quickly and easily using just 1 can. Some people say Canned Sardines smell fishy. OK, they smell fishy, but you can reduce the fishy smell. I use Sake (Rice Wine).

Ingredient

1 can (110 g)

Sardines in Olive Oil

1 tablespoon

Sake (Rice Wine)

1/2 tablespoon

Curry Powder

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Drain canned Sardines and place Oil in a small frying pan, and sprinkle Sake (Rice Wine) over drained Sardines in the can.

* Step 2

Add thinly sliced Onion to the pan and cook over medium low heat until soft. Add Garlic, Ginger and Curry Powder, and stir.

* Step 3

Add Tomato, Soy Sauce and Mirin, stir, then add Sardine and all the liquid, cook for a few minutes OR until the sauce thickens.

* Step 4

Half fill a bowl with warm Cooked Rice and cover it with Sardine mixture. Add some chopped Spring Onion and Shichimi (OR Chilli), and enjoy.
