If you are looking for a healthy and refreshing soup for your Ramen Noodles, you may want to try this one. The main ingredients are Prawns, Tomato and Iceberg Lettuce. With Ramen Noodles in hot soup? Yes. It’s quick and easy to prepare, very filling, and healthy and satisfying.

Ingredient

* Step 1

Place Chicken Stock, Sake (Rice Wine) and Garlic in a saucepan, and bring to the boil. Season with Salt and White Pepper. *Note: You may wish to season with Soy Sauce OR Fish Sauce, etc.

* Step 2

Meanwhile, cook Ramen Noodles according to the instruction on the package.

* Step 3

Add Prawns to the boiling soup. When the Prawns changed colour, add Tomato and Lettuce, and bring back to the boil. And it’s done.

* Step 4

Place some soup in a bowl, add drained Ramen Noodles, and cover with the remaining Soup. Add some Spring Onion and Crispy Chilli Oil, and enjoy.

When I stir-fry Harusame Noodles, I usually soak them in water before cooking. You don’t need to do that for this dish. This is a very simple, quick and easy recipe. Today I used 100g Lettuce, but you can add a lot more.

Ingredient

Eggs

1 teaspoon

Oil *plus extra

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

Cooking instructions

* Step 1

Whisk Egg(s) in a small bowl, and lightly season with Salt & White Pepper.

* Step 2

Combine all the Sauce ingredients in a small bowl. Prepare Prawns and Lettuce. You must prepare everything before you start cooking. Cooking process doesn’t take long at all.

* Step 3

Heat Oil in a frying pan, cook Egg(s) softly, return to the bowl. Add extra Oil if required, cook Prawns, then add Lettuce and lightly season with Salt and White Pepper. *Note: DO NOT overcook Lettuce.

* Step 4

Add the sauce. Tilt the pan and cook Harusame Noodles in the sauce, turning and stirring. When Harusame Noodles become soft and transparent, return the Egg, and mix to combine.

‘Sweet Chilli Prawns’ is a very popular dish and I have my own recipe, but it is much easier to cook if you use store-bought Sweet Chilli Sauce. Today I cooked it for my lunch and made it into this Rice Bowl. There is softly cooked Egg underneath the Prawns. It was yummy!

Ingredient

Egg

1 teaspoon

Oil *plus extra

2 tablespoons

Sweet Chilli Sauce

1/2 teaspoon

Soy Sauce

1 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

In a small bowl, combine all the Sauce ingredients.

* Step 2

Place shelled Prawns in a bowl, add 1 pinch Salt, White Pepper and Potato Starch, mix well, and set aside.

* Step 3

Finely chop up Onion and Garlic. Whisk Egg in a bowl and season lightly with Salt & White Pepper. Prepare everything before you start cooking.

* Step 4

Start heating a small frying pan over medium heat. Half fill a bowl with warm Cooked Rice while you are waiting the pan to heat up. Add Oil to the pan and cook Egg softly, then place the softly cooked Egg on the Rice.

* Step 5

Add some extra Oil to the pan, cook Onion and Garlic. When softened, add Prawns, and cook stirring and turning occasionally. *Note: If you use Spring Onion, cook Prawns first.

* Step 6

When Prawns are cooked, add the Sauce. When the sauce has thickened, it is done. Pour the Prawn mixture over the Egg and enjoy.

I do love the combination of Prawns, Egg and Iceberg Lettuce. I often use them for Fried Rice and Stir-fries. They are great for Soups as well. You may be surprised to hear cooking Iceberg Lettuce, but Iceberg Lettuce is actually good for cooking as it retains the crispiness after being cooked. This is another very simple Udon dish. Absolutely easy to cook, nutritious and very comforting.

Ingredient

1/2 teaspoon

grated Ginger

Cooking instructions

* Step 1

Prepare all ingredients. Mix Potato Starch with Water in a small bowl.

* Step 2

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 3

Combine all the soup ingredients in a saucepan. Alter the amount of Salt OR Soy Sauce depending on the saltiness of the stock. Bring to the boil over medium heat.

* Step 4

Add Prawns and Lettuce. When Prawns are cooked, gradually add Potato Starch mixture, stirring well, then add lightly whisked Egg. When Egg is softly cooked, the soup is done. It won’t take long.

* Step 5

Place the drained Udon in a bowl, cover with the mixture, add some Spring Onion and Crispy Chilli Oil if you have it, and enjoy.

I love ‘Prawn Wonton Soup’ and I bet you do. My family members love it too, but they love this ‘Crispy Fried Prawn Wontons’ even more. It is surprisingly easy to make at home and wrapping can be done even by children. These Fried Wontons can be a very popular party food, too.

Ingredient

1 tablespoon

Egg White

1/8-1/4 teaspoon

Salt

Cooking instructions

* Step 1

Coarsely chop up shelled Prawns, add Spring Onion, Ginger, Shiitake, Egg White and Potato Starch, then Salt & Pepper and mix well.

* Step 2

Place 1 wonton wrapper on a flat surface such as a plate, place 1 heaped teaspoon prawn mixture in centre. Wet edges with water and fold up to form a triangle and pinch to enclose very well.

* Step 3

Note: If you are willing to do an extra work, make some pleats on the top sides of the triangle, then press firmly.

* Step 4

Repeat with remaining mixture and wrappers.

* Step 5

Heat Oil to 160 to 170℃ and deep-fry them until nicely browned. *Note: If the oil is too hot, Wontons get browned too quickly before the filling is cooked.

* Step 6

Serve with your favourite dipping sauce. My favourite dipping sauce is Ponzu. If you don’t have Ponzu, use Soy Sauce and Rice Vinegar. I added Spring Onion and Shichimi (Japanese Chilli Spice Mix) to the sauce.

* Step 7

*Note: I used yellow coloured wrappers for the triangle Wontons in the below photo.
