‘Goma-ae’ Wombok Sesame Salad

‘Goma-ae’ is a Japanese dish of vegetables dressed with sweet sesame seed sauce. A variety of vegetables are suitable for the dish, but I have found Wombok is tricky. It tend to turn bland. For Wombok, an extra Salt is needed. And I believe Ginger and Sesame Oil improve the flavour. This ‘Goma-ae’ Wombok is different from the traditional ‘Goma-ae’, but it is not bland.

Ingredient

1 teaspoon

grated Ginger

1/2 tablespoon

Sugar

1/2 tablespoon

Sesame Oil

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Clean Wombok, cut into 1cm wide pieces, and separate hard white parts and soft parts.

* Step 2

Place the hard white parts into a mixing bowl, add Salt, and toss to mix well. Set aside for 15 minutes OR microwave for 1 minutes (I used 1100W microwave) to speed up.

* Step 3

To make the Sesame Sauce, combine all the ingredients in a small bowl. *Note: See ‘How To Grind Sesame Seeds Using A Plastic Bag’. You can wrap Sesame Seeds with food wrap or baking paper, then press dow using a rolling pin.

* Step 4

Remove any excess salty water from Wombok, add soft parts of Wombok, the Sesame Sauce, Spring Onion and some White Pepper (OR Ground Chilli), and mix to combine. Serve immediately.

Today I seasoned this Red Cabbage Salad with my Garlic Sesame Dressing, that I most frequently use fo salads. You can replace Garlic with Ginger, OR you may wish to use both. This Cabbage Salad can be a great side dish. Make it a few hours before you serve it, so that Red Cabbage will soften and the salad tastes better.

Ingredient

1 pinch

Salt

1 tablespoon

Soy Sauce

1/2 tablespoon

Sugar

2-3 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Combine the Dressing ingredients in a mixing bowl. The amount of each ingredient is just a suggestion. Alter the amount to suit your taste.

* Step 2

*Note: I usually grind Sesame Seeds in Suribachi (Japanese Mortar), but you can grind Toasted Sesame Seeds using a plastic bag.

* Step 3

Thinly slice Red Cabbage and Red Onion. Cut Carrot into thin strips. Using vegetable slicers, the preparation is quick and easy. Add all vegetables to the Dressing in the mixing bowl, add 1 pinch Salt, and mix well to combine.

White Parts of Watermelon & Cucumber Salad

When I serve Watermelon to my family, I always cut the red parts into bite-size pieces, and the white parts (with some pink parts) go to the compost. You know the white parts are actually edible and have similar texture to Cucumber. Today I dressed the white parts and Cucumber with sweet and sour Sesame Dressing. It was delicious. Please remember the outer parts of the white parts are very tough and woody. Use the softer parts, which are actually sweet, so that you need to alter the sweetness of the Sesame Dressing.

Ingredient

1/2-1

Cucumber

2 tablespoons

Rice Vinegar

2 tablespoons

Soy Sauce

1 tablespoon

Sesame Oil

Cooking instructions

* Step 1

To make Sesame Dressing, combine all the ingredients. This amount might be too much, but it is the easiest measurement, and leftover is always handy. *Note: You may wish to add extra Sugar, but please remember Watermelon is slightly sweet.

* Step 2

Remove green skin and tough woody parts from the white parts of Watermelon. Cut into bite-size pieces. Cut Cucumber into bite-size pieces as well.

* Step 3

Place Watermelon and Cucumber in a mixing bowl, add a few pinches Salt, and combine.

* Step 4

Add the Dressing as required and mix well. Sprinkle with finely chopped Spring Onion and serve. *Note: You can set it aside for a while to marinate the vegetables, so that the flavour will develop, but a lot of water would come out.

‘Yakiniku’ Sauce is a dipping sauce for Japanese style BBQ. My family’s ‘Yakiniku’ Sauce is very versatile and can be used as a seasoning sauce for many dishes. It goes very well with Avocado and Tofu as well. This is a healthy and very nutritious ‘Hiyayakko’, a Japanese dish of cold Tofu. You don’t like Tofu? Try this one. I am confident you will enjoy it.

Ingredient

1/2 teaspoon

grated Garlic

1/2 teaspoon

grated Ginger

1/2 teaspoon

Sugar

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the Yakiniku Sauce ingredients in a mixing bowl. Add Avocado and Spring Onion, and mix to combine.

* Step 2

Remove excess water from Tofu, place in serving bowl OR plate, cover with the Avocado mixture.

* Step 3

Add Toasted Nori on top and enjoy. Drizzle with extra Soy Sauce if required.

Kanten is a Japanese gelling agent that is used for setting liquid to make gelatinous dessert. Kanten is made from sea plants. It contains almost no calories as it is 80% dietary fibre. Firm jelly made with Water and Kanten has no calories at all and it is a very helpful food when you try to lose weight. Add this jelly to your favourite salad, so that you will feel full longer, and also you have the benefit of its dietary fibre. In Japan, this type of water jelly is popular and it is often enjoyed with ‘Ponzu’.

Ingredient

2 tablespoons

Soy Sauce

2 tablespoons

Rice Vinegar

1 teaspoon

Sugar *optional

Cooking instructions

* Step 1

To make jelly, combine Water and Kanten Powder (OR Agar Agar Powder) in a saucepan and Bring to the boil, stirring occasionally. Simmer for 1 minute and remove from heat. Cool slightly and pour into a container OR square cake tin. When cool enough, leave it in the fridge until firmly set.

* Step 2

Cut Kanten Jelly into cubes OR strips. Add to a salad and enjoy with your favourite low-calorie dressing.
