1 . Coconut Milk Bread

Coconut Milk Bread

Probably you won’t taste Coconut in this bread. This bread tastes like ordinary bread, but it smells good. Today I used 1/2 cup Coconut Milk and 1/2 cup Water. For stronger Coconut flavour, you can increase the amount of Coconut Milk. You might prefer using Coconut Milk only.

Ingredient

2 tablespoons

Sugar

1/2 teaspoon

Salt

2 teaspoons

Dry Yeast

1/2 cup

Water

Cooking instructions

* Step 1

Combine Flour, Sugar, Salt and Dry Yeast in a mixing bowl.

* Step 2

Place Coconut Milk and Water (OR Coconut Milk only) in a heat-proof measuring cup, and warm in the microwave. Add to the warmed Coconut Milk mixture and Oil (OR melted Butter) to the flour mixture, and mix well. Knead until smooth, adding extra Flour as required, and form a soft dough.

* Step 3

Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.

* Step 4

Divide the dough in half. Roll out each portion into a ball and place in a greased loaf tin, and set aside in a warm place for 1 hour or until doubled in size. Preheat oven to 180℃.

* Step 5

Brush the top with saved Coconut Milk (*optional) and bake for about 30 minutes or until nicely browned. When the top gets too dark, cover with a sheet of foil.

Remove from loaf tin to wire rack and cool.

Cheese & Bacon ‘Pampushky’

I have been loving ‘Pampushky’, Ukrainian Bread Rolls, since I discovered them. ‘Pampushky’ dough is made with Eggs and they have similar texture to Doughnuts. They can be savoury OR sweet. My ‘Easter Pampushky’ are absolutely delicious. Today I made savoury ones and topped with Cheese and Bacon. I knew they would taste great and I was right. I enjoyed these Cheese & Bacon ‘Pampushky’ with a hearty vegetable soup.

Ingredient

2 teaspoons (7 g)

Dry Yeast

2/3 teaspoon

Salt

1 teaspoon

Sugar

1/2 cup

Warm Milk

1 tablespoon

saved Egg

Cooking instructions

* Step 1

Combine Bread Flour, Yeast, Salt and Sugar in a large bowl. Make a well in the centre and pour in Eggs (save 1 tablespoonful for brushing), Milk and Oil. Mix well and knead, adding extra Flour as required, for 2 to 3 minutes until smooth and elastic.

* Step 2

Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.

* Step 3

Grease a large cake tin (I used 23cm deep pie dish) with Oil OR Butter. *Note: If you want to bake rolls on a baking tray, line the tray with baking paper.

* Step 4

On a floured surface, shape the dough into a round, divide into 8 portions, roll each portion into a ball, then slightly flatten it, so that it would be easier to place Cheese and Bacon on top.

* Step 5

Arrange the dough in the tin (OR baking tray), brush the top with the saved Egg, and place Cheese and Bacon. Cover with a plate or plastic wrap, and let rise in a warm place for 30 to 45 minutes. Preheat oven to 180℃.

Bake for 20 to 25 minutes OR until nicely browned. Enjoy freshly baked hot Pampushky.

When I started searching for Ukrainian foods, it was in March, one of the first discoveries was Poppy Seeds Roll. It was a thick log of bread that was rolled with black Poppy Seed Paste. I was curious and I wanted to taste it, but I didn’t know where I could find the Poppy Seed Paste. Then, when I was walking along the street in a local town, I came across a shop called ‘European Grocery Store’. I popped in the shop and had a look around. Guess what I found there. A can of Poppy Seed Filling called ‘Masa Makowa’. Today I made this yummy treat using the ‘Masa Makowa’ and Ukrainian ‘Pampushky’ dough.

Ingredient

2 teaspoons (7 g)

Dry Yeast

1/2 teaspoon

Salt

1/4 cup

Caster Sugar

100 ml

Warm Milk

30 g (2 tablespoons)

melted Butter OR Sunflower Oil

Cooking instructions

* Step 1

Combine Bread Flour, Yeast, Salt and Sugar in a large bowl. Make a well in the centre and pour in Eggs, warmed Milk and Melted Butter (OR Oil). Mix well and knead, adding extra Flour as required, for 2 to 3 minutes until smooth and elastic.

* Step 2

Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.

* Step 3

Divide the dough into 2 portions, On a floured surface, roll out each portion of the dough into a large 4-5mm thin oblong, that will be about 25cm x 40cm. Spread 1/2 of Poppy Seed Paste, and roll up into a log.

* Step 4

Cut each log in half lengthways, and you will have 4 strips. Twist each strip, place the twisted strips on a baking tray lined with baking paper, and form a shape that you like. I made a round shape. Set aside in a warm place and preheat the oven to 180℃.

Brush the saved Egg over the dough, and bake for 20 to 25 minutes OR until nicely browned and cooked through. Transfer to a wire rack and cool.

4 . Easter ‘Pampushky’

‘Pampushky’ are Ukrainian Bread Rolls. They can be savoury OR sweet, and baked OR deep-fried. As the ‘Jam Filled ‘Pampushky’ that I made the other day were so good, today I used the same dough to make these Easter ‘Pampushky’. They are almost same as Hot Cross Buns, but the texture is similar to Doughnuts. I didn’t make crosses on them. I dusted with Icing Sugar instead. Enjoy with nice cuppa.

Ingredient

2 teaspoons (7 g)

Dry Yeast

1/2 teaspoon

Salt

1/4 cup

Caster Sugar

1 teaspoon

Ground Cinnamon

100 ml

Warm Milk

1/4 cup

Currants

1/4 cup

Sultanas

1/4 cup

Mixed Peels

Cooking instructions

* Step 1

Combine all Dry Ingredients in a large bowl. Make a well in the centre and pour in Eggs, warmed Milk and Melted Butter, and mix to combine. Add Dried Fruit and gently knead, adding extra Flour as required, and form a soft dough.

* Step 2

Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.

* Step 3

On a floured surface, shape the dough into a round, divide into 8 portions, roll each portion into a ball. Grease a cake tin with Butter and arrange the balls of dough in the tin. *Note: I used 23cm deep pie dish with 20cm base.

* Step 4

Cover with a plate or plastic wrap, and let rise in a warm place for 45 minutes to 1 hour. Preheat oven to 180℃.

Bake for 15 to 20 minutes or until nicely browned. Transfer to a wire rack and cool, or enjoy hot. Today I dusted with Icing Sugar and served warm.

5 . Jam Filled ‘Pampushky’

Jam Filled ‘Pampushky’

‘Pampushky’, the Ukrainian Bread Rolls, can be baked OR deep-fried. ‘Pampushky’ can be sweet, and sweet ‘Pampushky’ are often deep-fried and filled with Fruit Jam. Today I baked these sweet ‘Pampushky’. It’s very difficult to wrap ordinary Jam with bread dough. The easiest way is filling Jam after ‘Pampushky’ are baked.

Ingredient

2 teaspoons (7 g)

Dry Yeast

1/2 teaspoon

Salt

1/4 cup

Caster Sugar

100 ml

Warm Milk

30 g (2 tablespoons)

melted Butter OR Sunflower Oil

Cooking instructions

* Step 1

Combine Bread Flour, Yeast, Salt and Sugar in a large bowl. Make a well in the centre and pour in Eggs, warmed Milk and Melted Butter (OR Oil). Mix well and knead, adding extra Flour as required, for 2 to 3 minutes until smooth and elastic.

* Step 2

Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.

* Step 3

On a floured surface, roll out the dough to 2cm thickness, and cut out rounds using a round cutter or a drinking glass. Today I used 7cm cutter and made 11 rounds. *Note: You can simply divide the dough into 10 to 12 portions and roll each portion into a ball.

* Step 4

Place the rounds (OR balls) on a baking tray lined with baking paper, cover with plastic wrap, and let rise in a warm place for 45 minutes to 1 hour. Preheat oven to 180℃.

Bake for 15 minutes or until nicely browned. Transfer to a wire rack and cool. When cooled, make a hole using a thin knife, use a piping bag attached with nozzle to fill Jam in the ‘Pampushky’.

Dust with Icing Sugar. *Note: If you want to coat them with Sugar, ‘Pampushky’ need to be wet. You can wet them with Melted Butter, OR deep-frying is better method as it would be easy to coat with Sugar. See my recipe ‘Doughnuts’.
