Soy Bean Salad is very versatile and you can season it with any sauce you like. ‘Crispy Chilli Oil’ and ‘Gochujang Mayo Dressing’ are really delicious. Today I used Japanese seasonings, that are Miso and Wasabi. I know many people don’t enjoy the spiciness of Wasabi. Add only a small amount, so that you will enjoy the distinct flavour of it, but it won’t kill your sinus.

Ingredient

1 teaspoon

Soy Sauce

1 teaspoon

Sugar

1 teaspoon

Sesame Oil

1 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a mixing bowl. *Note: Alter the amount of Wasabi to suit your taste.

* Step 2

Cut Cucumber and Carrot into small pieces and add to the bowl. Add all other ingredients and mix to combine.

* Step 3

*Note: The photo blow is the same salad but I added Dried Cut Wakame and Toasted Sesame Seeds.

‘Soy Sauce Egg’, Boiled Egg marinated in Soy Sauce, has become popular in Melbourne where I live as ‘Ramen’ (Japanese style noodles in soup) has become popular and ‘Soy Sauce Egg’ is a common topping for ‘Ramen’. You can marinate Boiled Eggs in Miso as well. I recommend to add extra ingredients for flavours. These ‘Miso Marinated Eggs’ are more suitable to eat with freshly cooked Rice. They are also great for drinking.

Ingredient

1 tablespoon

Mirin

Cooking instructions

* Step 1

Prepare Boiled Eggs to the softness that you prefer.

* Step 2

Combine all the Marinade ingredients in a small bowl. *Note: If you like the Marinade sweeter, add some Sugar.

* Step 3

Peel the Boiled Eggs, coat with the Marinade, and leave in the fridge for at least 2-3 hours. The longer they are marinated, the saltier they get. *Note: I recommend to use a plastic bag, so that Eggs can be marinated more evenly.

Here is another super easy dish that you can make using a small can of Mackerel. My husband always complains that Mackerel smells bad, but Mackerel is my favourite fish and it goes so well with Sweet Miso Sauce. To reduce the fishy smell, I often add Sake (Rice Wine) OR Mirin to the fish. Please be aware Sake and Mirin contain alcohol. This dish is for grown-ups.

Ingredient

1 can (125 g)

Mackerel in Brine

1/2 tablespoon

Sugar

1 tablespoon

Mirin

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Peel Potatoes, cut into bite-size pieces, cook in slightly salted water until soft.

* Step 2

Combine all the Sauce ingredients in a mixing bowl. Alter the amount of Soy Sauce depending on the saltiness of the Miso you use. *Note: I used mild White Miso and added 1 teaspoon Soy Sauce. You might need no Soy Sauce at all.

* Step 3

Darin cooked Potato pieces and add to the sauce. Drain canned Mackerel, break into bite-size pieces and add to the sauce. Add Spring Onion, saving some for topping, and mix to combine.

* Step 4

Sprinkle with the saved Spring Onion and some Shichimi (Japanese Chilli Spice Mix), and serve.

My lates craze is Sweet Miso Sauce. I have been cooking many things in the sweet Miso flavour. Fish, Chicken, Pork, Tofu, Vegetables, Mushrooms, and so many things go very well with this flavour. And Sweet Miso Sauce is easy to make. You only need Miso, Sugar and a little bit of Soy Sauce depending on the saltiness of the Miso you use. The mixture can be too thick to use, so you need to add some Mirin, Sake (Rice Wine) OR Water. Depending on the ingredients, you can add grated Ginger, Garlic, Chilli, OR etc.

Ingredient

1-2 leaves

Cabbage

1/2 teaspoon

grated Ginger

1/2 tablespoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

Cook Spaghetti in salted water according to the instruction.

* Step 2

Combine all the Sauce ingredients in a small bowl.

* Step 3

Prepare ingredients. Chop up a green part of Spring Onion finely and that is for topping, and cut the rest into bite-size pieces.

* Step 4

When Spaghetti is nearly cooked, heat Oil in a frying pan, cook Vegetables and Pork. When cooked, adds the Sauce and stir to combine.

* Step 5

Drain Spaghetti and add to the pan, and stir to combine.

* Step 6

Sprinkle with the finely chopped Spring Onion and some Shichimi (Japanese Chilli Spice Mix), and enjoy.

Mackerel ‘Chan-Chan-Yaki’ Udon

‘Chan-Chan-Yaki’ is originally a fishermen’s dish from Hokkaido, Japan’s northern island. Salmon is used for the dish, but it is delicious with Mackerel. I have shared my ‘Mackerel Chan-Chan-Yaki Rice Bowl’ on this website. This is Udon Noodle version of the dish. I used Canned Mackerel. It’s another quick & easy dish, very filling and nutritious, and absolutely delicious.

Ingredient

1/2 tablespoon

Oil

1 teaspoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 2

Combine all the Miso Sauce ingredients in a small bowl. If the Miso that you use is very salty, you may not need to add Soy Sauce at all.

* Step 3

Heat Oil in a frying pan over medium heat, cook Onion and Carrot, and add Spring Onion and Cabbage. When Vegetables are cooked, add Mackerel and the Miso Sauce, and gently stir for a minute OR until the sauce thickens.

* Step 4

Add drained Udon Noodles and stir to combine. *Note: You may wish to add some Chilli. Today I added some Crispy Chilli Oil.
