What do you cook with leftover Cooked Rice? ‘Doria’ is my first choice if I cook something for my family. I frequently cook Rice Soup and Fried Rice. This is a new option for leftover Cooked Rice. It is Omelette with melting Cheese on top. You can add bits and pieces of leftovers. I added some Roast Chicken, Peas and Corn today.

Ingredient

1-2

Eggs

1-2 teaspoon

Oil OR Butter

Cooking instructions

* Step 1

Place Spring Onion (OR Onion) and additional ingredients of your choice in a mixing bowl. Today I added leftover Roasted Chicken, Peas and Corn Kernels. Add warmed Cooked Rice and Chicken Stock Powder, and mix to combine.

* Step 2

Add Egg(s), season with Salt & Pepper, and mix well.

* Step 3

Heat Oil (OR Butter) in a small frying pan over low heat. I used 20cm pan. Pour the mixture and form a round omelette. Cook until the bottom is nicely browned.

* Step 4

Flip the omelette over, you might need to use a plate to do so, scatter shredded Cheese on top, cover with a lid, and cook until the other side is also nicely browned and the Cheese is melted.

* Step 5

Sprinkle with extra Black Pepper and enjoy.

I actually don’t like SPAM. I don’t like the sausages that are made of similar meat, either. So, I don’t buy it, but I was given a can of SPAM, and I didn’t want to waste it. I tried to make it into a rice bowl dish. SPAM lovers would enjoy this dish.

Ingredient

1

Egg

1 teaspoon

Sugar

1 teaspoon

Mirin

1 teaspoon

Soy Sauce

1 teaspoon

grated Ginger

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl.

* Step 2

Cook Egg as you like. You can use a boiled Egg. The easiest method is cook it in a small frying pan, before you cook SPAM, into sunny-side up or scrambled.

* Step 3

Cut SPAM into bite-size pieces. Cook in a small non-stick frying pan over medium low heat until nicely browned all over. Use paper towel to remove excess oil.

* Step 4

Add the sauce and combine.

* Step 5

Half fill a bowl with warm Cooked Rice and cover it with Vegetables of your choice, Egg and SPAM. Sprinkle with some Shichimi (Japanese Chilli Spice Mix) and Toasted Sesame Seeds. Add some Japanese Mayonnaise if you like it. *Note: I drizzled some Soy Sauce over the Egg.

I have shared my recipe ‘Monk’s Vegan Soup’ that is called ‘Kenchin-jiru’ in Japan. ‘Kenchin-jiru’ is 100% plant-based soup. It is full of flavours as a variety of ingredients are added. This is a ‘Kenchin-jiru’ inspired rice bowl dish. Please use many different Vegetables and Asian Mushrooms, and Abura-age (Fried Thin Tofu) is essential for this dish.

Ingredient

1 teaspoon

Sesame Oil

1/2 cup

Water

1 tablespoon

Soy Sauce

1/2-1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl. Alter the amount to suit your taste.

* Step 2

Heat Sesame Oil in a frying pan, cook Vegetables. It takes longer time to cook some Vegetables. Please cook them accordingly. Lightly season with Salt & Ground Chilli OR White Pepper.

* Step 3

Add Abura-age, stir the sauce well and add it to the pan. Stir well until the sauce thickens and all ingredients are softly cooked. Half fill a bowl with warm Cooked Rice and cover it with the mixture.

There are many recipes to cook this great combination of ingredients, Garlic Chives, Egg & Pork. My favourite flavour is always Soy Sauce and Oyster Sauce. This is one of the dishes I repeatedly cook for my lunch. It is so quick & easy, yet really delicious, comforting and filling. If you don’t have thinly sliced Pork, you can use Pork Mince.

Ingredient

1-2 teaspoons

Sesame Oil

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Oyster Sauce

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl. Alter the amount to suit your taste.

* Step 2

Heat Sesame Oil in a frying pan, cook Egg softly, and transfer to the bowl you used to whisk the Egg.

* Step 3

Add Pork and Garlic to the pan, and cook until Pork is lightly browned. Season lightly with Salt & Pepper. Add Garlic Chives and stir for a minute.

* Step 4

Stir the sauce well, then add the sauce to the pan and stir until the sauce thickens. Return the cooked Egg and combine. Half fill a bowl with warm Cooked Rice and cover it with the mixture.

This is another super quick and easy dish that is perfect for my lunch. Today I used leftover Beef Mince, but naturally you can use thinly sliced Beef. Pork is also good. Garlic Chives is garlicky, but I recommend to add Garlic as well. It’s a very simple dish, yet really yummy with Rice.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Mirin

1/2 teaspoon

Sugar *optional

Cooking instructions

* Step 1

In a small bowl, combine the Sauce ingredients. Sugar is optional. Add it if you like the sauce sweeter.

* Step 2

Heat Sesame Oil in a frying pan over medium high heat and cook Beef Mince and Garlic. When the Beef Mince changed the colour, add Garlic Chives and the Sauce, and stir until combined well.

* Step 3

Half fill a bowl with warm Cooked Rice and cover it with the Beef mixture. Sprinkle with some Shichimi (Japanese Chilli Spice Mix) and enjoy.
