Spinach & Wakame Harusame Salad

One of my family’s TOP 3 warm day dishes is ‘Harusame Salad’. Cucumber is an essential ingredient to make it, but I didn’t have it when I craved it on the other day. So I used totally different ingredients with same flavour dressing. The result was brilliant!

Ingredient

2 tablespoons

Dry Cut Wakame

2 handfuls

Baby Spinach

1/2 tablespoon

Toasted Sesame Seeds

1 tablespoon

Sugar

1/2 tablespoon

Sesame Oil

Cooking instructions

* Step 1

Combine all the dressing ingredients in a mixing bowl.

* Step 2

Cook Harusame Noodles in boiling water. When noodles are almost cooked, add Dried Cut Wakame. Just before you stop cooking, add Baby Spinach. Darin, rinse in cold water, drain well, then squeeze excess water.

* Step 3

Noodles are long. Cut them short if you prefer.

* Step 4

Add to the dressing in the bowl, add sliced Ham (OR Roasted Pork) as well, then mix to combine.

‘Harusame Salad’ is one of my family’s favourite summer dishes. I have been making the same ‘Harusame Salad’ for decades. This summer, I created a new version with Thai dressing, that has a nice flavour with citrus juice. The salad is so refreshing and definitely another summer favourite for us.

Ingredient

2 tablespoons

Lime / Lemon Juice

2 tablespoons

Fish Sauce

1 tablespoon

Brown Sugar

Cooking instructions

* Step 1

Combine all the dressing ingredients in a small bowl.

* Step 2

Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5-10cm.

* Step 3

Cook Pork and Prawns in a frying pan. No seasoning is required. *Note: They can be boiled with Harusame Noodles if you like.

* Step 4

Place everything into a large mixing bowl, add the dressing and mix to combine well. Sprinkle with finely chopped Spring Onions and serve immediately.

You have some Roast Chicken leftover? Try this simple Harusame noodle salad. It will be a very yummy light lunch.

Ingredient

1/2-1

Cucumber

5-6 leaves

Cos Lettuce

1 tablespoon

Sugar

2 tablespoons

Soy Sauce

2 tablespoons

Rice Vinegar

1 tablespoon

Sesame Oil

1 tablespoon

Roasted Sesame Seeds

1 teaspoon

Mustard *Optional

Cooking instructions

* Step 1

Cook 'Harusame' Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well.

* Step 2

Cut Cucumber and Cos Lettuce into thin strips. Tear Roast Chicken into strips.

* Step 3

Mix all the dressing ingredients in a large bowl, then add everything and combine well.

I often keep a large containerful of thinly sliced cabbage and carrot in my fridge. This mix is ready to use for salad or anything. I often add extra ingredients to it such as egg or canned fish, and season with a dressing. Here are the three dressings that I like. This salad looks far too large amount for 4 servings, but it is mostly sliced cabbage. It’s perfect for a light meal or a side dish for dinner.

Ingredient

2-3 leaves

Red Cabbage

1 tablespoon

Soy Sauce

1 tablespoon

Rice Vinegar

1 tablespoon

Sesame Oil

1 tablespoon

1/2 tablespoon

Sugar

1 tablespoon

Roasted Sesame Seeds

1 teaspoon

Hot Mustard

4 tablespoons

Japanese Mayonnaise

Cooking instructions

* Step 1

Slice all vegetables into thin strips. Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5cm.

* Step 2

Mix all the dressing ingredients in a bowl. Place everything into a large mixing bowl, add the dressing and mix to combine. Sprinkle the chopped Spring Onions and Crispy Fried Shallots on top and serve immediately.

5 . Mabo Harusame

A Japanese word ‘Okazu’ is hard to be translated into English. There is no English word that has the same meaning. The Japanese principal food is rice (short grain). The most typical meal in standard Japanese cuisine is called ‘Ichijū Sansai’ which means ‘One Soup & Three Dishes’. This doesn’t include rice. These dishes are the accompanying dishes to be eaten with rice and ‘Okazu’ are the these dishes. I heard this ‘Mabo Harusame’ is one of the most popular ‘Okazu’ dishes these days. The basic concept of this dish is replacing Tofu of ‘Mabo Dofu’ with Harusame, the starch noodles. It tastes yummy but less nutritious. That’s why I tend to add lots of vegetables and mushrooms to this dish.

Ingredient

1/2 tablespoon

Sesame Oil

1 tablespoon

Sugar

2 tablespoons

Soy Sauce

2 tablespoons

Sake

Cooking instructions

* Step 1

Soak Harusame Noodles in cold water for 10 to 15 minutes to hydrate. When they are soft, drain well and tear short if very long.

* Step 2

Prepare vegetables. Basically you need to slice them into thin strips or cut into small pieces. I used 1 Carrot, a handful of Snow Peas, 100g cooked Bamboo Shoots, 5 Shiitake Mushrooms. Other suggestions include Shimeji, Enoki, Beans, Black Fungus (Kikurage), Garlic Chives, Bean Sprouts, Pak Choi, etc.

* Step 3

Place all the sauce ingredients in a mixing bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

* Step 4

Heat Sesame Oil in a large frying pan or a wok, cook Pork Mince with Ginger and Garlic, breaking up the mince. When the Pork changes colour, add vegetables and cook for a few minutes.

* Step 5

Pour in the sauce mixture and bring it to the boil. Then add Harusame Noodles.

* Step 6

Harusame Noodles become transparent. At this point, you might think the sauce is too much and you need more noodles. DO NOT worry because the noodles will soak up the sauce. When the sauce is almost gone, it is ready to serve.
