Beef & Bok Choy Ramen Soup

This is a super quick & easy Ramen Noodle soup. The soup is thickened with Potato Starch. You may wish to add other Vegetables and Asian Mushrooms. Ramen Noodles (OR Chinese Egg Noodles) can be replaced with Udon Noodles or Rice Noodles.

Ingredient

1 tablespoon

Soy Sauce

1 tablespoon

Sake (Rice Wine)

Cooking instructions

* Step 1

Heat Stock (OR Water & Asian Chicken Bouillon Powder) in a saucepan. Add Soy Sauce, Sake (Rice Wine) and Sesame Oil, and bring to the boil.

* Step 2

Add thinly sliced Beef to the soup and simmer for 5 minutes. Add Bok Choy. When Bok Choy is cooked, season with Salt & White Pepper as required. Mix Potato Starch Flour mixture and gradually add it to the simmering soup. Cook until the soup thickens.

* Step 3

Meanwhile, cook Ramen Noodles (OR Chinese Egg Noodles) as instructed, drain well and place in the serving bowls. Cover with the thickened soup, sprinkle with finely chopped Spring Onion, and enjoy immediately.

I often use my ‘Mabo Dofu’ miso sauce for seasoning stir-fried vegetables. I realised that the sauce goes very well with Tomatoes. I knew that Soy Sauce goes well with Tomatoes, but it was a surprise discovery. If you like my ‘Mabo Dofu (Tofu)’ and Tomatoes, this dish might become one of your favourite dishes.

Ingredient

1 tablespoon

Oil

1 pinch

Salt

2 tablespoons

Dark Colour Miso

2 tablespoons

Soy Sauce

2 tablespoons

Sugar

Cooking instructions

* Step 1

Place all the sauce ingredients in a bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

* Step 2

Lightly whisk Eggs in a separate bowl, and season with a pinch of Salt. Heat Oil in a frying pan over medium-high heat. When the pan is hot, cook Eggs gently stirring until set but still soft. Transfer to a plate.

* Step 3

Cook Pork Mince with Garlic, Ginger and Spring Onions until Pork changes colour, then add the sauce and combine.

* Step 4

Add Tomatoes and cook for a few more minutes until Tomatoes started softening. Return the cooked egg and gently combine.

* Step 5

Half fill a bowl with freshly cooked rice and cover it with the pork and tomato mixture. Sprinkle saved chopped Spring Onion on top and serve.

Avocado goes so well with Japanese seasonings such as Soy Sauce, Wasabi, Japanese Mayo, ‘Ponzu’, etc. Do you know it goes well with Kimchi, the Korean salted & fermented veggies? I had a jar of Wombok Kimchi in the fridge, but it had turned quite sour. I usually cook sour Kimchi, but it was hot and I didn’t want to cook anything. So I mixed it with Avocado, and added some Sesame Oil and Sugar to soften the sourness. It turned into a delicious side dish!

Ingredient

1/2 cup

Kimchi

1/8 teaspoon

Sugar *optional

1 tablespoon

Toasted Sesame Seeds

Cooking instructions

* Step 1

Cut Kimchi into the size that is easy to eat. Place all ingredients in a bowl and mix to combine. *Note: Sugar is optional. I add it when Kimchi is sour.

On the other day when I was trying to cook ‘Simmered Daikon’ for dinner, I found there was not enough Daikon. I needed more something, so I added Carrots and also Pork for my meat-loving husband. The result was amazingly great, and my family liked it better than Daikon only version.

Ingredient

300-400 g

Daikon

2 tablespoons

Sugar

4 tablespoons

Soy Sauce

2 tablespoons

Mirin

Cooking instructions

* Step 1

Remove skin & cut Daikon about 1-2cm thickness. Cut in half if large. Cut Carrots and Pork into chunky pieces.

* Step 2

Place Daikon, Carrot and Ginger in a large saucepan or pot, add Water just enough to cover. Bring to the boil over high heat and reduce the heat to simmer for 10 minutes.

* Step 3

Add seasoning ingredients and Pork, and bring back to the boil. Reduce the heat to low, cover with lid and simmer for 20 minutes.

* Step 4

Remove the lid and cook over medium heat until the liquid is almost gone.

Don’t buy instant cup soups. Try to make by yourself and find out it is actually easy to make. This is one of the quickest & easiest soups I know. Yet it is nutritious and surely warms you up. I sometimes add rice to it or pour this soup over rice. So delicious.

Ingredient

4 tablespoons

Sake (Rice Wine)

1 tablespoon

Potato Starch

1 tablespoon

Water

Cooking instructions

* Step 1

Place Chicken Stock, Ginger, Sake and Sesame Oil in a large saucepan and bring to the boil over high heat. Season with Salt and White Pepper.

* Step 2

Add Creamed Corn and mix well, and bring back to the boil.

* Step 3

Place Potato Starch and Water in a small bowl and mix well. Then add the mixture to the hot soup and stir to thicken the soup.

* Step 4

Add Egg(s) slowly in a circular motion into the hot soup, gently stirring. When the egg is cooked, remove from the heat. Check the flavour and add extra Salt & White Pepper if required.

* Step 5

Add finely chopped Spring Onion. Sprinkle extra White Pepper over if you like and enjoy.
