Ingredient

honey

1 teaspoon

salt

1 jar

mincemeat

6 teaspoons

water

6 tablespoons

icing sugar

Cooking instructions

* Step 1

Place all the ingredients for the dough in a large bowl and mix until it forms a smooth dough Knead the dough by hand for about 8 minutes or with a dough hook on an electric mixer for 5 minutes

* Step 2

Cover the dough and leave to rise in a warm place for about 40 minutes Knead the dough for one minute

* Step 3

Return to the bowl, cover and leave to rise for another 40 minutes Knead the dough for one minute

* Step 4

Roll the dough into a rectangle until it is about 1/2cm thick Cover the dough with mincemeat

* Step 5

Roll up starting with the short edge Slice into 12 buns and place on a baking sheet

* Step 6

Preheat the oven to 180 oC Leave to rise for 20 minutes

* Step 7

Brush with the beaten egg Bake in the centre of the oven for 20 minutes

* Step 8

Allow to cool Mix together the icing sugar and water and drizzle over the buns

* Step 1

Preheat the oven to 170 oC Grease and line a loaf tin

* Step 2

Whisk together the caster sugar, eggs, dairy free milk and melted dairy free spread Stir in the gluten free flour and mincemeat Spoon into the loaf tin

* Step 3

Bake for 50 minutes

* Step 4

Remove from the loaf tin and allow to cool Dust with icing sugar before serving

Cooking instructions

* Step 1

Line a 6″ baking tin with greaseproof paper Crush the biscuits into small crumbs and mix in the melted dairy free spread Press into the baking tin and chill in the fridge while you prepare the filling

* Step 2

Preheat the oven to 180 oC Melt the chocolate in a bowl over simmering water

* Step 3

Whisk the egg whites until they form peaks Add in one tablespoon of the caster sugar and whisk until it forms stiff peaks

* Step 4

In a separate bowl mix together the cream cheese, remaining sugar and egg yolks Fold the egg white into the cream cheese mix but don’t over mix it Remove a third of the mixture and stir the melted chocolate into it

* Step 5

Pour the plain mix over the biscuit base Drop tablespoons of the chocolate mix on top and then swirl with a knife to marble Bake for 45 minutes

* Step 6

Allow to cool in the tin Chill in the fridge for at least 2 hours Remove from the tin and serve with grated chocolate and berries

Cooking instructions

* Step 1

Preheat the oven to 150 oC Grease a 9″ round spring-form tin Crush the biscuits into fine crumbs and pour in the melted dairy free spread Press into the base of the tin Bake for 15 minutes

* Step 2

Whisk together the dairy free cream cheese, caster sugar, gluten free flour, cinnamon, mixed spice and egg yolks In a separate bowl whisk the egg whites until they form stiff peaks Carefully fold the egg whites into the cream cheese mix Place the apple slices over the biscuit base Pour in the cream cheese mixture Bake for 20 minutes

* Step 3

While the cheesecake is in the oven, make the crumble topping Place the flour, oats, brown sugar and cinnamon in a bowl Rub in the dairy free spread until it forms a crumble Sprinkle on top of the cheesecake and return to the oven for 30 minutes

* Step 4

Allow to cool to room temperature then chill in the fridge for at least 4 hours Cut into slices and serve

Preheat the oven to 180 oC Line an 8" square cake tin with baking parchment

* Step 2

Stir the melted dairy free spread and brown sugar together Whisk in the egg and vailla extract Fold in the flour and pour into the cake tin

* Step 3

Make the cinnamon swirl by stirring together the melted dairy free spread, brown sugar and cinnamon
