Cooking instructions

* Step 1

Preheat the oven to 180 oC Add a drizzle of olive oil to a shallow pan over a medium heat Saute the onion and garlic for 5 minutes Add in the paprika, oregano, basil and pulled pork Pour in the passata and season to taste, set aside

* Step 2

Blanch the potato slices in salted boiling water Drain and set aside

* Step 3

Assemble the potato bake in a large casserole dish by layering the potato slides, tomato pulled pork and dairy free cream Top with the dairy free cheese and bake in the one for 30 minutes or until the potato slices are tender

Place the pancetta in small pan and fry until golden, about 5 minutes Set aside

* Step 2

Preheat the oven to 180 oC Slice the potato into 1/2cm slices and place on a baking sheet Drizzle with olive oil and season with salt and pepper

* Step 3

Bake for 20 minutes Remove from the oven and top with the dairy free cheese and pancetta

* Step 4

Bake for another 10 minutes Serve topped with a little blob of mayo and a sprinkle of chives

* Step 1

Preheat the oven to 180 oC Grease a 6 hole muffin tin Cook the pasta according to the instructions on the packet Drain away the water and return to the pan

* Step 2

Stir in the dairy free spread and egg Pour in the milk and the garlic puree Stir in two thirds of the cheese and season with salt and pepper Divide amongst the 6 muffin cups

* Step 3

Sprinkle the breadcrumbs and remaining cheese on top Bake in the oven for 30 minutes

* Step 4

Allow to sit for a couple of minutes before removing from the muffin moulds Serve with a tomato dipping sauce

olive oil

brown sugar

Cooking instructions

* Step 1

Start making the caramelised onions by placing the olive oil, brown sugar and onions in a saucepan over a medium to low heat Cook for 30 minutes or until the onions are soft and caramelised Stir in the balsamic glaze Set aside and start making the risotto

* Step 2

Put the olive oil, chilli flakes and garlic in a large pan and sauté over a medium heat for 3 minutes Stir in the risotto rice Add the vegetable stock one ladle at a time stirring until the liquid is fully absorbed

* Step 3

Taste the rice to make sure it is properly cooked, add more liquid if required Season with salt and pepper

* Step 4

Stir in 2/3 of the onions and the dairy free cheese Spoon into two bowls and top with the rest of the onions

Cook the pasta per the instructions on the packet and set aside

* Step 2

Place the drizzle of olive oil in a shallow pan over a medium heat Add in the garlic, onion, pepper and broccoli and stir fry for 5 minutes Add in the prawns and cook for another 3 minutes Sprinkle on the cajun seasoning and cook for a minute

* Step 3

Pour in the dairy free cream and simmer for a couple of minutes Stir in the dairy free cheese and season to taste Stir in the cooked pasta and divide between two bowls
