Ramadan Special - Broccoli Fried Rice
This is a simple and a yummy broccoli fried rice that is just perfect for the vegetarians, It can be enjoyed for lunch / dinner with some raita and papad. So it is health bhi and taste bhi.
Cooking instructions
* Step 1
Steam the broccoli till it becomes slightly soft. Heat 1 tbsp. oil in a pan and stir fry it till light brown. Keep aside.
* Step 2
Heat remaining oil and ghee and temper with bay leaves, shahjeera, cinnamon, cardamoms and cloves. Saute for a few seconds.
* Step 3
Add the onion, ginger, garlic and chilies. Stir fry till light brown.
* Step 4
Now add the broccoli, salt and garam masala powder.
* Step 5
Mix everything well and add the rice. Continue to saute for 1-2 minutes.
* Step 6
When done, add the coriander and mint leaves. Give it a stir and serve with raita and papad.
