Mom's Dhar Doklhi

Cooking instructions
* Step 1
Put 1/6 cup dhal (half of whats in picture) into cooker and wash and remove water. Put 4 cups water, cut 8' carrot and 2 roma tomatoes
* Step 2
Add pinch of salt and ing and cook for 3 whistles, about 5 to 10 minutes.
* Step 3
While this is cooking make the dough
* Step 4
In a bowl mix 2 tbsp canola oil, 1 coster of dhana, and 1/2 cup water. Add the 1 tsp ujmo, 1 tsp sesame seed, pinch of turmeric, and 1 tbsp masala without garlic and stand mix. Add salt to taste.
* Step 5
Finally add 2 cups of wheat flour slowly while adding another 1/2 cup water and kneed. Make into balls.
* Step 6
Roll into sheets while adding wheat flour to ensure it doesnt stick
* Step 7
After the dhar whistle has rung thrice, add 2 tbsp gore, 1 tsp garam masala, 1 tbsp ginger and blend until even.
* Step 8
Add 6 cups of water and salt to taste. Heat on stove until boiling and slowly add dokhli sheets while cutting from the middle
* Step 9
Make a seperate vagar with oil, pinch of rye, pinch of ujmo, and some red masala if needed. Once the rye pops, add ing quickly and after a few seconds add to dhar dokhli.
* Step 10
Cook until the dokhli is cooked through. It can be slow and stirred. Covered or open. About 10 minutes.
