Lentil Soup After Dental Surgery
This is a perfect soup for recovering from dental surgery. Smooth, flavorful, and healthy. Almost makes you want to have more dental work done (Not really).

Cooking instructions
* Step 1
Fit the food processor with the medium blade.
* Step 2
Slice and process the Spanish onion. Reserve onion juice to add later, remove onion to a separate mixing bowl.
* Step 3
Process carrots and celery, reserve to a separate mixing bowl.
* Step 4
Make one cup vegetable broth from bullion, or use homemade. I use Better Than Bullion, you may have a favorite brand.
* Step 6
Remove stems from jalapeno and serrano
* Step 7
Slice each pepper lengthwise once, then slice each half lengthwise. Mince. (Don't forget to use gloves, and don't rub your eyes or any other sensitive area.) Reserve.
* Step 8
In a large Dutch oven, heat 1 tbsp olive oil on medium heat till shimmering.
* Step 9
Add onion, cook until soft, not brown.
* Step 10
Add garlic and chile peppers, saute for 30 seconds in a separate part of the pot, then combine.
* Step 11
Remove from heat, pour back into mixing bowl.
* Step 12
Add 1 tbsp of olive oil to Dutch oven, heat for 30 seconds.
* Step 13
Add celery and carrot. Stir to coat the vegetables. Put the lid on, cook for 5 minutes.

Remove lid, saute until vegetables are soft.
* Step 16
Add 1 more tbsp olive oil to Dutch oven. Heat until shimmering.

Add mushrooms and red pepper, sauté for 5 minutes.

Reduce heat to low. Add onion mixture and celery-carrot mixture back into Dutch oven.

Add pepper, sage, and oregano. Stir to combine.
* Step 20
Add lentils, the vegetable broth, soy sauce, and rice wine vinegar. Adjust seasonings as needed. If more liquid is needed, a mix of water and soy sauce will add flavor.
* Step 21
Add bay leaf and celery leaf. Stir to combine.
* Step 22
Simmer on low heat for 30 minutes.
* Step 23
Remove to 1 quart containers, cool for 1 hour.
* Step 24
Add the soup, a quart at a time, to the food processor with its regular blade.
* Step 25
Process for 30 seconds, or until the soup is mostly smooth, with a little texture left.
* Step 28
While recuperating, consume with a spoonful of sour cream and a pinch of red pepper flake for garnish.
