Balsamic Tomato & herb chicken

Cooking instructions
* Step 1
Prep-
Adjust oven rack to top position and pre heat to 425 degrees.
Bring large pot of salt water to a boil.
Finely dice tomatoes.
Thinly slice chives.
Pick parsley leaves from stems; finely chop leaves.
Peel and mince garlic.
* Step 2
Cook Chicken-
Rinse chicken and pat dry with a paper towel.
Season with 2 tsp Italian seasoning, salt,and pepper.
Add a drizzle of oil to Medium pan over medium heat, add chicken and cook till browned (2-3 minutes per side)
Transfer chicken to a baking pan top with half the mozzarella (keep pan handy for later).
Bake till chicken is cooked through (9-11 minutes)
* Step 3
Cook Pasta-
Once water is boiling, add spaghetti to pot cook 9-11 minutes.
Reserve 1/2 cup pasta water (keep empty pot for letter)
* Step 4
Balsamic Tomato-
While pasta cooks, heat a drizzle of oil in a pan used for chicken over medium heat.
Add tomato and remaining Italian seasoning.
Cook, stirring, until slightly softened (1-2 minutes).
Stir in vinegar and 1/2 tsp sugar, Simmer until mixture is slightly thickened (about 1 minute).
Remove from heat and stir in 2 tbsp butter, melt butter and then stir in chives and chopped parsley; season with salt and pepper.
Turn off heat.
* Step 5
Toss Pasta-
Melt 4 tbsp butter in pot used for pasta over low heat; stir in garlic and cook until fragrant (30 secounds).
Add drained spaghetti, 4 tbsp butter toss thoroughly.
Season generously with salt and pepper.
* Step 6
Finish & Serve-
Divide spaghetti top with sliced chicken and a spoon balsamic tomato and mozzarella over chicken.
