BK's Crockpot Carnitas

This is a recipe I found years ago that I've been adjusting to my taste and putting my spin on finishing it. This pairs very well with my Mojo Lime Slaw.

Ingredient

Food ration :

6 - 8 servings

Cooking time :

8 hrs on low
1 tsp

salt

1/2 tsp

coriander

1/4 tsp

cinnamon

Cooking instructions

* Step 1

This recipe is for a smaller 4 lb roast. If you crockpot will hold larger just double the Carnitas Spice Rub and use 4 bay leaves.

* Step 2

Mix all Carnitas Spice Rub ingredients together in a small bowl.

* Step 3

Trim excess fat cap from your roast.

* Step 4

Coat roast on all sides with spices and rub into meat.

* Step 5

Place roast in crockpot (fat cap side up).

* Step 6

Add bay leaves and chicken broth.

* Step 7

Cook on low about 5 hours (3 hours on high) then turn roast over.

* Step 8

Continue cooking until pork will shred with a fork. About 3 more hours on low (2 hours on high)

* Step 9

Remove roast and cube or shred.

* Step 10

For the restaurant style crispy edges, finish pork on a flat top grill or arrange on a sheet pan and place under a low broiler until edges are browned.

Serve with tortillas and whatever toppings you like.
