Cooking instructions
* Step 1
Preheat oven to 390 degrees
* Step 2
Chop all vegetables into two inch cubes and add to Pyrex pan
* Step 3
Add spices, oil, and wine and mix
* Step 4
Cover with aluminum foil and bake for 40 min
* Step 5
After 40 min, remove foil and reduce oven temp to 350 degrees
* Step 6
Cook for 20 min then remove the pan to stir vegetables. Then cook for an additional 20 min
* Step 7
Remove from oven and let completely cool before serving. This dish is best served at room temperature topped with feta cheese
