Vegan Brown Rice Porridge/Kheer

Made of brown rice cooked in coconut milk and sweetened with dates syrup and raisins this kheer has a very rich flavour and creamy texture, which are boosted further by spices like cardamom. The combination of brown rice, coconut milk, cardamom, raisins, nutmeg, cinnamon, almonds and dates syrup makes a perfect kheer recipe to satisfy your sweet cravings! It is also vegan and sugar free, making it an extremely healthy option! #ws4

Ingredient

1/2 cup

brown rice

150-200 ml

water

3-4 tsp

dates syrup

1 tbsp

raisins

15-20

almonds

As Required:

little nutmeg powder

Cooking instructions

* Step 1

Soak the brown rice for 3-4 hours.

* Step 2

Drain the water and grind roughly.

* Step 3

Finely grind the almonds and dry dates.

* Step 4

Take a deep pan and keep the water for heating.

* Step 5

When the water becomes hot, add the ground brown rice and cook stirring occasionally till soft.

* Step 6

Add the dates syrup and mix well. Cook for 1 minute.

* Step 7

Add coconut milk, almond powder, cardamom powder, cinnamon powder, and nutmeg powder.

* Step 8

Cook for 5 minutes stirring continuously.

* Step 9

Serve hot or cold garnished with chopped almonds.

* Step 10

Tip : You can adjust the dry dates and dates syrup according to your taste.
