Sabudana khichda

#everydayveg Sabudana or tapioca pearls are cholesterol free, easy to digest & loaded with beneficial minerals . It is a healthy choice of carbohydrate as it provides dietary fibres . Sabudana khichda is a combination of light herb & spices & mixed vegetables cooked together with soaked sabudana . This is also a popular vrat recipe .

Ingredient

2 tablespoon

chopped onion

1/2 teaspoon

cumin seeds

1 tablespoon

diced carrot

1 tablespoon

diced potatoes

1 tablespoon

green peas

1 teaspoon

lime juice

1 tablespoon

cooking oil

1 tablespoon

roasted peanuts

1 teaspoon

salt

sugar

Cooking instructions

* Step 1

First soak the sabudana overnight in double quantity of water. next day place it in a strainer so that extra water can drain out. Then cut potato & carrots into small dice.

Now in a pan heat up oil & temper the oil with cumin seeds.Let them splutter. Then add chopped onion & saute.after couple of minutes 1st add the potatoes & fry it for a minute or two then add the carrot & peas respectively & fry until fully cooked.

* Step 3

Mix some lemon juice & salt to the strained sabudana thoroughly. Once the vegetables are done, add chopped green chillies & transfer the seasoned sabudana into the pan. Then mix everything together.At this stage keep the heat low to medium otherwise the sabudana will become soggy.

* Step 4

Once the tapioca seeds turn translucent, add pinch of sugar & chopped coriander leaves & mix.

Finally turn off the heat & squeeze some lemon juice on the top & mix well.Serve it warm with some roasted peanuts on the top.
