Chicken Tuscany

Chicken Tuscany

Quick Italian chicken for those times when you're in a rush but need something savory, tomato-y, and cheesy for your chicken.

Ingredient

Spinach

2 tbsp

Olive Oil

1 tsp

Salt

1/3 tsp

Pepper

Cooking instructions

* Step 1

Split chicken breasts and season chicken with salt and pepper.

* Step 2

Preheat a large pan on medium-high heat with olive oil. Add the chicken. Cook for two minutes or until golden brown on one side.

* Step 3

Flip the chicken and add the spinach, seasoned tomatoes, and white wine vinegar. You may also add mushrooms if you so choose. Put the lid on the pan and cook with reduced heat for about five minutes.

* Step 4

Cut the mozzarella into fine slices and place them on top of the chicken. Set the chicken aside and let the cheese melt for three minutes.

* Step 5

Lightly garnish with basil leaves, oregano, and a dash of lemon if so desired. Serve!
