Sweet Potato Pancakes

Cooking instructions

* Step 1

Preheat oven to 200c. Place the potatoes on an ovenproof dish and using a fork or knife poke the potatoes a couple of times. Bake for 45-50 minutes or until soft and fully cooked through. The potatoes can also be peeled, cut and boiled until cooked through but I find they lose some of their sweetness doing it this way. However you chose to do it, allow to cool to a heat that can be handled by hand.

* Step 2

Sift together the flour and baking powder into a bowl.(1/4 tsp of nutmeg and 1/4 tsp of ground cinnamon can also be added)

* Step 3

Peel the potatoes and mash. Add to the flour mixture.

* Step 4

Add the milk and egg and beat into the mixture preferably with a hand blender until the mixture is smooth.

* Step 5

In a frying pan heat the butter over low/medium heat and spoon in the batter (1-1.5 tbsp sizes are just about right).

* Step 6

Cook until the pancake begins to Bubble then flip and cook on the other side.

* Step 7

Remove excess grease with kitchen paper.
