Candied Pamelo Rind

Cooking instructions

* Step 1

Cut the rind off the pamelo and cut into strips.

* Step 2

Next bring a large pot of water to a boil. Blanch the peels for 1 minute then plunge into an ice bath, rinse, change the water in the pot and repeat a further two times. This helps remove some of the bitterness.

* Step 3

Bring 1 cup of water and 1 cup of sugar to a boil, allow the sugar to dissolve then add the peels and reduce to a simmer. Cook for 60 minutes on low.

* Step 4

Remove the rinds to a rack to cool down.

* Step 5

Spread the extra sugar in a sheet pan then toss the rinds in the sugar till they are evenly coated.

* Step 6

Place back onto the cooling rack or in a tray lined with foil and allow to dry for about half a day. Note: The rinds will not fully dry out but the sugar will harden slightly on the outside.
