Simple Roasted Pork Shank

Cooking instructions

* Step 1

In a large pot add water, a good pinch of salt and the pork shank and cook for about an hour in half to two hours. Add more water when it starts losing water.

* Step 2

When it's soft and tender, remove from the pot and transfer to an ovenproof dish.

* Step 3

Preheat oven to 180c.

* Step 4

Pat dry the skin using kitchen roll and and then rub some olive oil and season the skin with a good pinch of salt and transfer to the oven.

* Step 5

Cook until the skin becomes crispy. I didn't actually time it, but I think it took a little over an hour.
