Açorda (The poor man's dish)
Originating from the Alentejo region of Portugal, this used to be a regular recipe in my household growing up. This is an easy and extremely cheap recipe that can be made in less than 20 mins. Also a good recipe to use up old bread.

Cooking instructions
* Step 1
Soak the salted cod 24 hours prior to cooking to remove the excess salt in cold water. Change the water 3-4 times prior to cooking. You want the cod to have no taste of salt at all.
* Step 2
In a large deep pan, bring water to the boil and add the eggs, and cod and boil for 12-15 mins.
* Step 3
In the meantime while thats all cooking, cut and chopped, the garlic, coriander (cilantro), and green pepper. Place in a large bowl.
* Step 4
Add the olive oil and salt to the bowl.
* Step 5
Add the beaten egg to the mix and stir well.
* Step 6
Remove the cod and eggs from the boiling water when done. Add water to the large bowl, leave it for up to 5 minutes.
* Step 7
Remove the shell from the egg, cut the cod into smaller pieces and place on a tray ready to serve.
* Step 8
Add the bread into the bowl and lightly ladle water over the bread.
* Step 9
Now it's ready to serve. Serve alongside the egg and cod.
