Eggs My Way

I had a few bits in the fridge that needed using up so I came up with this for lunch.

Ingredient

Food ration :

2 servings

Cooking time :

15 mins
1 medium

red onion

25 grams

salted butter

8 slice

salami

1 pinch

black pepper

1 pinch

salt

Cooking instructions

* Step 1

Slice the mushrooms.

* Step 2

Add them to a dry frying pan and sprinkle some sea salt and cook until all the water comes out from the mushrooms while cooking them at the same time. About 5-8 minutes.

Remove mushrooms from pan and reserve.

* Step 4

Heat the butter in a frying pan on a medium heat

* Step 5

Slice the onion and add to the butter

Fry the onion until soften about 5-8 minutes

* Step 7

Beat the eggs with a fork

* Step 8

Add the eggs and potatoes and stir

Then add the mushrooms

* Step 10

Sprinkle with the salt, pepper and chilli

* Step 11

Add the salami slices and fry for 2-3 minutes

And serve
