Makuti (Bihari dessert for special occasions)
Makuti is a delectable dessert from state of Bihar cooked during special social occasions specially marriages. Ideal way to enjoy Moong Dal & Rice cooked in thick consistency of full fat milk
Ingredient

Cooking instructions
* Step 1
Soak Moong dal & Rice separately for 2 hrs each, drain
* Step 2
In a pressure cooker add rice and dal and add 1 cup water, on high flame pressure cook for 1 whistle, reduce flame and cook for 5 mins, depressurise and add 1/2 cup water. Consistency would be liquid as we don’t need to curdle while putting in the hot milk
* Step 3
Water added and made into liquid consistency
* Step 4
In a heavy bottomed pan add milk and bring to one boil on high flame
* Step 5
Add dal-rice mix with one hand and stir with another as Dal should not curdle
* Step 6
Keep stirring to reduce to half. Add saffron infused milk and stir
* Step 7
Add condensed milk, sugar and cardamom powder and keep stirring to reduce to half. Set aside to cool completely. Refrigerate for 2 hrs
* Step 8
Pour into serving dessert bowls or glass and garnish with more chopped dry fruits. Enjoy 😊
