Thai Pasta Salad
AKA peanut butter salad :)
The first few times I made this I hadn't yet figured out the trick of when and how to mix in the peanut butter resulting in lumps of peanut butter in the salad. My family fondly calls this salad peanut butter salad thanks to those few times I made that mistake ;)
Cooking instructions
* Step 1
Slice the onions and mushrooms and crush the garlic. Add to a skillet with a spoon of grape seed oil. Sauté until onions are clear
* Step 2
Meanwhile, dice the rest of your veggies
* Step 3
Add vegetables to the skillet and sauté a bit
* Step 4
Once the veggies are starting to cook, add in the soy sauce
* Step 5
I like the veggies nice and soft so cover and let simmer until soft enough
* Step 6
While veggies are cooking, boil a pot of pasta. When draining the water, don't wash off pasta because you want it to stay hot
* Step 7
Mix the veggies together with the pasta
* Step 8
Here's the tricky part.. make sure to add and mix in the peanut butter when everything is hot so the peanut butter hides itself in the salad
* Step 9
Enjoy this delicious dish either warm or cold. It's awesome both ways
