Keto Meatloaf

Keto, paleo, low carb This was my first attempt at a low carb meatloaf and I was very impressed with the outcome. Next time I may not weave the bacon and instead just place 8 across the top so it would get one slice per serving. The weave makes slicing complicated.

Cooking instructions

* Step 1

Preheat oven to 350

* Step 2

Add eggs to mixing bowl and lightly beat

* Step 3

Chop all veggies and add to mixing bowl

* Step 4

Add tomato paste and seasonings to mixing bowl and mix evenly

* Step 5

Add Coconut flour and mix evenly

* Step 6

Add all meat and hand mix until blended

* Step 7

Place mixture on baking sheet and form into loaf

* Step 8

Glaze top of loaf with bbq sauce

* Step 9

Weave bacon on top of loaf

* Step 10

Bake at 350 for 1 hour then up temperature to 415 for additional 30 minutes

* Step 11

Allow to cool for 15 min before serving
