Burnt garlic flavour vegetable kadhi

Kadhi is a traditional recipe of India which is made out from yoghurt gram flour mixture with or without veggies. Different regions have different style and different flavors of making kadhi like Gujurati kadhi, Punjabi kadhi ,Sindhi kadhi etc. Today I prepared mixed vegetables kadhi with garlic flavour which can go well with rice, roti or paratha.

Cooking instructions
* Step 1
Heat a kadhai with 2tsp mustard oil and put mustard seeds, cumin seeds and asafoetida in it.
* Step 2
When they are crackled then add the chopped onions along with chopped green chilli in it and cook till they become translucent.
* Step 3
Then add the ginger garlic paste and cook for 1 minute.
* Step 4
Add the tomato paste along with the dry spices and cook till the masala release oil.
* Step 5
Then add the chopped vegetables like potato, eggplant, pumpkin, carrot, cauliflower, beans,
* Step 6
Cover it and cook for sometime then add water in it. As I used drumsticks, so I add the drumsticks in this stage. Again cover it and cook for 5 minutes in low flame.
* Step 7
In the meantime prepare the yoghurt mixture by adding gram flour and water. Mix it well.
* Step 8
Add the yoghurt mixture into the vegetables. Allow it to boil for sometime.
* Step 9
Then add sugar and mix well and switch off the flame.
* Step 10
Heat a tadka pan and put remaining mustard oil in it and put the chopped garlic in it and cook till they become brown in low flame.
* Step 11
Then add this to the kadhi and immediately cover the kadhi for 5 minutes.
* Step 12
After 5 minutes mix the kadhi. Now your burnt garlic flavour vegetable kadhi is ready. Serve with rice.
* Step 13
Note : For retaining the garlic flavour you must avoid curry leaves. You must use mustard oil for better result.
