Puran poli is a traditional Maharashtrian sweet dish which is generally prepared in Holi, Ganesh chaturthi, Diwali and any auspicious occasion. This is nothing but a flat bread which is stuffed with 'puran' a mixture of mashed chana dal and jaggery and the outer layer is made out of wheat flour or all purpose flour or both.

Cooking instructions
* Step 1
First wash and soak the chana dal for 1 hour.
* Step 2
Boil them in the cooker with salt and water up-to 3-4 whistles.
* Step 3
Strain the dal from the water.
* Step 4
Prepare the spice powder.
* Step 5
Heat a pan and add ghee in it.
* Step 6
Add the powder spices in it.
* Step 7
Then add the boiled dal and Jaggery in it.
* Step 8
Cook it for 10 minutes till they become dry.
* Step 9
Then cool the mixture and grind them.
* Step 11
Then take all the ingredients for the dough.
* Step 12
Knead it by adding water in it.
* Step 13
Make small balls of the dough and sprinkle some flour on the rolling pin and roll it like chapati.
* Step 14
Then add the puran in it. You can add the puran in two ways like in the pictures.

Then close it and roll it carefully.
* Step 16
Then make it like Paratha in the tawa by adding ghee and also cook both sides of it.
* Step 17
Now your puran poli is ready to serve. Serve hot with curd of any curry.

You may store the puran for 10-12 days in an airtight container in refrigerator and make puran poli whenever you want.
