Watermelon salad with mint and feta
After making the watermelon rind chutney I had quite a lot of watermelon not to waste 😉so I made this very simple yet tasty watermelon salad and kept it chilled in the fridge until it was dinner time. Nice combination of flavours and healthy too.
Cooking instructions
* Step 1
Put all the ingredients together in a bowl and sprinkle the juice of the half lime over the salad. Mix. It will keep in the fridge for a couple of hours. Enjoy!!!
