Not very attractive but absolutely delicious stuffed courgettes
I had some home-grown courgettes to use up and also a big bunch of basil so I decided to combine the two, with a few more ingredients and came up with this unconventional but very tasty recipe. Next time I'll add a few toasted bread crumbs for a bit more consistency. Makes a great Summer evening meal.

Cooking instructions
* Step 1
Get your ingredients together
* Step 2
Put the almonds, garlic and cheese into the food processor
* Step 4
Add the basil and a generous slosh of olive oil
* Step 6
Chop the onions ans sauté in a little oil for five minutes
* Step 7
Take the pulp out of the courgette by making small cuts like this and spooning out with a teaspoon
* Step 8
Add the chopped serrano ham to the onions once they are soft
* Step 9
Add the courgette, stir over a moderate heat for 5 mins. Turn to oven on to 190°
* Step 10
When the courgette has softened out the mixture into a bowl and add a good dollup of pesto and mix well
* Step 11
Put the rest of the pesto in a jar, cover with olive oil and put it in the fridge. It will keep for a food week
* Step 12
Put the courgettes on an oiled.baking tray and stuff them with the ham and pesto nixture. Put in the oven for about 40 minutes
* Step 13
Serve with a simple salad. Enjoy!! 😊😊
