Bean cake
This is a popular street food in some parts of Nigeria, West Africa , sometimes served at breakfast too. It’s mostly accompanied by enriched soft breads and milk teas or cereals. It’s mainly prepared by fried and enjoyed by most people, but I prefer a healthier version , so i rather bake mine , although also fried some to meet others needs and preferences.
Cooking instructions
* Step 1
Soak the black eye pea in water overnight. Rinse off and pulse the beans with some water into a food processor for less than 1 minute in order to agitate the beans. Then transfer to a bowl, wash and remove the beans skin in the motion of both palms rubbing each other.
* Step 2
Pulse the washed beans, mint leaves, chopped onion, diced chili peppers and the water into a food processor and blend to a purée. Transfer purée to a bowl and add salt to taste. Divide the purée into two separate bowls, one for the fried and another for the baked version.
* Step 3
Take small scoops of the purée and place on a greased baking tray. Bake on a preheated oven, at 180 degree Celsius for about 20-30 minutes.
* Step 4
On a heated small pot or pan for deep frying, add the oil and allow to heat for 1-2 minutes. Add several small round scoops of the other purée bowl into the pot and fry for 3 minutes on one side, and for another 3 minutes on the other side. Remove the fried bean cake and place on a paper towel, then serve hot.
