I think the pumpkin skin is my favourite part of the vegetable. I love it when I have a recipe that calls for the pumpkin flesh only as then I get to make these chips. Honestly they are so good, really full of flavour and also a salty crispy treat.

Cooking instructions

* Step 1

Peel your squash using a large sharp knife - be careful! Always point the knife away from your fingers and cut downwards towards the chopping board.

You should now have a random assortment of squash peelings. I like to slice them into very rough chip shapes.

* Step 3

Put them on a baking tray, drizzle with your olive oil and sprinkle with Rosemary sprigs, and roast them at 190 for about 25-30 minutes. Check them after 15 minutes and give them a shake.

Give them a good sprinkle of sea salt and then eat them while they’re still warm πŸ˜‹
