* Step 1

Preheat the oven to 190 C. Place the salmon on a tray lined with foil. Season with salt and pepper and bake for 13-15 mins.

* Step 2

Cook the cauliflower rice in the microwave for 4 mins.

* Step 3

Serve the cauliflower rice, topped with coriander and sweet chilli sauce and the salmon on the side.
