Green Grape Vine Jam

Green Grape Vine Jam

Our grape vine has gone bonkers this year and produced several kilograms of green grapes. They are not eaters as they are very sour and seeded. I’m going to attempt wine this year, but we have so many I’ve made a simple jam too using no special ingredients or equipment. 3 ingredients only, inspired by Yui’s recipe

Ingredient

30 ml

water

200 gm

white sugar

Cooking instructions

* Step 1

Remove all of the stems from the grapes and pull out any bad grapes (rotten or discoloured).

Add your 30 ml water to the pan then heat on a gentle flame for 5-10 minutes or until softened up.

Mash the grapes with a potato masher to release all of the juice. Then strain the whole mix through a drive. Discard the seeds and grapes and add the grape juice back into the pan.

* Step 4

Now add your sugar and lemon juice and bring the mixture up to a vigorous boil. Turn the heat down slightly and allow to continue to boil until the juice has thicker and will coat the back of a spoon. This takes ten minutes or so. Don’t forget about it or it can burn quickly (I speak from experience 😭).

Scoop any scum off the surface and discard. Pour into a bowl to keep for a week, or sterilised jars to keep for longer.
