Almost Greek Salad

Almost Greek Salad

Simple, fresh and lovely. No feta on ours sadly, but this was still a lovely salad to go with our dinner of salmon with lemon and dill. #Greece #globalfoodtour

Ingredient

Cooking instructions

* Step 1

Cut the cucumber lengthways. Use a teaspoon to scoop out the seeds (I just eat these during prep). Then thickly slice into half moon shapes.

* Step 2

Cut the tomatoes into quarters, then cut each quarter in half again. Thinly slice the onions.

* Step 3

Thinly slice the peppers. Then add all the salad veg into a large bowl.

* Step 4

Mix together the olive oil, oregano and lemon juice and pour this over the salad. Use your hands to toss the salad and make sure the veg is all coated nicely. Serve at room temp. Top with a block of feta if it’s your preference.
