Cauliflower Rice With Dill & Garlic

Fresh and plant based side dish which I think channels the natural simplicity of Greek food (even if it’s not a Greek dish).

Ingredient

1/2

lemon

1 tbsp

coconut oil

Cooking instructions

* Step 1

Gently fry the onion in the coconut oil for 5 mins or so. Add the garlic and continue to fry gently while you microwave your cauliflower.

* Step 2

Turn the heat up high now. Add the cauliflower rice and half of the dill to the onions and garlic in the pan and season with salt and pepper to taste. Fry for a few more minutes.

* Step 3

Serve topped with the remaining fresh dill and the fresh lemon squeezed over the top.
