Spaghetti with Slow Cooked Caramelised Onions & Garlic

Spaghetti with Slow Cooked Caramelised Onions & Garlic

I’m so in love with this dish! #Vegan comfort food at its best (well I think so anyway). It takes literally minutes to prep this and then you let the slow cooker do the hard work. The onions are very sweet at the end so I balanced that with fresh lemon juice and plenty of salt and pepper. You may need to adjust the seasonings to suit your palate, I liked the sweetness.

Cooking instructions

* Step 1

Mix the onions, garlic, sugar, olive oil and cumin seeds. Add them to the slow cooker and press down lightly into a flat layer.

* Step 2

Cook on low for 8-10 hours, stirring after the first 4 hours and then a few times more during cooking time if possible.

* Step 3

When your onions are ready, boil the spaghetti according to manufacturers instructions until cooked.

* Step 4

Mix the onions with the fresh lemon juice, salt and freshly ground pepper to your liking (I used plenty of seasoning).

* Step 5

Mix the onions with the drained spaghetti and serve.
