Roasted Seasonal Vegetables

When I’m tired after work, I like to prep the veg for dinner when I get home, before I sit down, and get it in the oven to slow cook so once I sit down I don’t have to get up again!! This is veg from my #seasonsupply veg bag, cooked down with tinned tomatoes, balsamic and olive oil. The oven does all the hard work 🙌 I’m serving it with crispy roasted chicken thighs.

Cooking instructions

* Step 1

Chop the vegetables roughly and add to a baking tray.

* Step 2

Pour the tinned tomatoes over the veg, season generously, sprinkle with the paprika and give it all a stir.

* Step 3

Drizzle with a good slug of olive oil and balsamic vinegar. Cover tightly with foil and bake for an hour at 175 C.

* Step 4

Top with basil leaves and serve.
