Plantain Frittata
Or like we call it in Kerala, Kaipola. It's a sweet frittata. Perfect to serve with tea.

Cooking instructions
* Step 1
Peel and cut plantains into cubes. Deep fry the plantain cubes till golden brown and drain on absorbent paper
* Step 2
Blend the eggs, sugar and the bread. Add cardamom.
* Step 3
Take a nonstick saucepan, fry cashew and raisins in ghee. Remove half from the pan, then add the fried plantain and pour over the egg mixture. Sprinkle the remaining cashew and raisins. Cover the pan with a lid.
* Step 4
Over a low flame, cook it for over 20 minutes or till done. If you think you can, you can flip to the other side to brown it. Alternatively, you can bake in a preheated 180 c oven for about 20 min or till the top is firm.
