Chorizo & Pepper Jack Egg Bake

Cooking instructions
* Step 1
Preheat Oven to 375F. In Large Dutch Oven or high-walled Cast Iron Pan, heat the oil over medium. Add chorizo and cook until it releases fat, about 2 minutes.
* Step 2
Add potatoes and cook, stirring, until they begin to brown, about 10 minutes. Add the black beans and spinach. Cook, stirring, until the spinach wilts, about 1 minute. Remove from the heat and season to taste with salt and pepper.
* Step 3
Add the eggs to the mixture, top with the cheese, and bake in the oven, uncovered, until eggs are set, 10-15 minutes. Remove from oven and allow to cool before slicing and serving topped with cilantro and plenty of hit sauce.
