Sausage Rolls

We used to buy these while on the road with the race horses when I was young. Now I make my own version of these tasty snacks.

Ingredient

1 hour
1/2 tsp

puff pastry

Cooking instructions

* Step 1

In a large bowl, combine sausage meat, onion, garlic, and pepper. Mix well.

* Step 2

Roll meat mixture into long roll approximately 1 inch in diameter, using plastic wrap. Refrigerate for an hour.

* Step 3

Meanwhile, roll out puff pastry to a large rectangle. Cut so they are approximately 5 inches wide strips. Place sausage meat onto pastry and roll tightly. Place on a rack seam down. Bake at 400°F for 20 minutes of until an internal temperature of 180°F and pastry is golden brown.

Allow to cool, cut into 6 inch pieces and refrigerate covered. Serve warm or cold.
