Paneer Salad with Peanut & Cumin

#PSALAD Try out this delicious and healthy Paneer salad recipe where paneer is marinated with a mixture of yogurt, cumin seeds, sumac powder and mint powder. And then mixed with a dressing made of roasted peanut, garlic, chilli and olive oil along with salad leaves and bell peppers.

Cooking instructions

* Step 1

Mix the yogurt, cumin powder, turmeric powder, mint powder, chili flakes, and salt in a bowl.

Add the paneer, mix well, then marinate for 15 minutes.

To make the dressing, heat 2 tbsp of the olive oil in a pan over medium heat. Add the chopped garlic and cook for 1 minute.

Then add the chopped chili, peanuts, and salt. Cook for a few seconds more.

Transfer the mixture to a mini food processor. With 2-3 tbsp cold water, blitz to a paste.Set aside.

Heat olive oil over medium heat. Then add the marinated paneer and fry for 1 minute on each side until slightly golden.

Transfer to a bowl, cover closely, and set aside while you prepare the salad.

Place salad leaves, roughly chopped purple cabbage, bell pepper julienne in a big mixing bowl.

Pour over the dressing and toss well.

Take a big serving plate and arrange the big pieces of salad leaves and cabbage leaves at the bottom followed by small pieces of leaves and bell peppers.

Lay the paneer pieces on top.

Garnish with some more prepared leaves and bell peppers, pomegranate arils, peanuts & paneer crumbs.
