Paneer Salad with Peanut & Cumin

Try out this delicious and healthy Paneer salad recipe where paneer is marinated with a mixture of yogurt, cumin seeds, sumac powder and mint powder. And then mixed with a dressing made of roasted peanut, garlic, chilli and olive oil along with salad leaves and bell peppers.

Cooking instructions
* Step 1
Mix the yogurt, cumin powder, turmeric powder, mint powder, chili flakes, and salt in a bowl.
* Step 2
Add the paneer, mix well, then marinate for 15 minutes.
* Step 3
To make the dressing, heat 2 tbsp of the olive oil in a pan over medium heat. Add the chopped garlic and cook for 1 minute.
* Step 4
Then add the chopped chili, peanuts, and salt. Cook for a few seconds more.
* Step 5
Transfer the mixture to a mini food processor. With 2-3 tbsp cold water, blitz to a paste.Set aside.
* Step 6
Heat olive oil over medium heat. Then add the marinated paneer and fry for 1 minute on each side until slightly golden.
* Step 7
Transfer to a bowl, cover closely, and set aside while you prepare the salad.
* Step 8
Place salad leaves, roughly chopped purple cabbage, bell pepper julienne in a big mixing bowl.
* Step 9
Pour over the dressing and toss well.
* Step 10
Take a big serving plate and arrange the big pieces of salad leaves and cabbage leaves at the bottom followed by small pieces of leaves and bell peppers.
* Step 11
Lay the paneer pieces on top.
* Step 12
Garnish with some more prepared leaves and bell peppers, pomegranate arils, peanuts & paneer crumbs.
