Elephant yam or suran is a variety of yam and it is a nutrient-dense tuber and good source of carbs. The tubers are rich in vitamin C, B-complex, potassium and manganese. Hence it is a very healthy alternative to potato. Here I am sharing a very delicious recipe of elephant yam fries which you can also serve as side dish.

Cooking instructions
* Step 1
Take elephant yam, wash it nicely.
* Step 2
Take 1 part, peel nicely and cut into fingers.
* Step 3
Blanch the yam fingers in boiling water for 3-4 minutes with 1 teaspoon of lemon juice. Lemon juice help to eliminate any itching stuff from the yam.
* Step 4
Drain the water keep in a colander for 10 minutes so that excess water drips from the yam.
* Step 5
Heat sufficient oil to a deep pan and fry the blanched yam in high heat for 4-5 minutes.
* Step 6
When the fingers become crisp from outside, remove from oil and place to a kitchen towel.
* Step 7
Heat 1 tablespoon of oil to a small tadka pan and temper with dry red chillies and curry leaves.
* Step 8
Pour the tadka over the yam. Also add in black salt and chat masala.
* Step 9
Chatpata elephant yam/suran fries are ready now to enjoy.
