Cooking instructions
* Step 1
Soak badam in hot water and remove the skin. Roughly chop onion, tomato, ginger and garlic. Get all the ingredients ready for the puree.
* Step 2
In a pan melt butter. Add onions, ginger, garlic and saute until they are soft. Add badam, cashew and whole spices.
* Step 3
Followed by tomatoes and salt. Add quarter cup water and cook till tomatoes are soft and mushy.
* Step 4
Let the mixture cool. Soak saffron in hot water for 10 mins. If using frozen paneer, soak them in hot water for 20mins to make it soft. Grind the mixture into a fine paste with half cup water. Strain the puree.
* Step 5
In a pan melt butter, add paneer cubes and saute just to coat paneer with butter. Add turmeric powder, chili powder, saffron soaked in water and mix well.
* Step 6
Add the strained puree, salt, sugar and let it come to boil until butter ooze out.
* Step 7
Add fresh cream, stir well and cook for 2 mins. Crush kasuri methi between your palms and add it to the gravy. Cook for another minute and switch off the flame.
* Step 8
Shahi paneer is ready to be served. Serve hot with your favorite variety of Indian bread.
