Salmon Rissoles

Make as many of these in advance as they freeze pretty well. They are great with a salad. If you make these please take a photo and post with a recipe thank

Cooking instructions

* Step 1

Put the salmon and liquid into a medium stirring bowl

* Step 2

Flake with a fork, removing, or mashing any bone they are also quite good, safe and completely edible

* Step 3

Mix in the grated onion, parsley, lemon juice, salt and pepper

* Step 4

Mix in the beaten eggs

* Step 5

And enough breadcrumbs, to make the salmon mixture is thick enough to shape 12 small patties

* Step 6

Roll the patties in half the breadcrumbs

* Step 7

In a large heavy pan over low heat 2 tables at, then add the parties, four at a time crowd the pan.

* Step 8

Fry the patties slowly on one side: add the remaining butter, turn the patties and fry until brown on the other side
