Aubergine breakfast sandwich

Healthy living Healthy option Also I've never tried aubergine before and now I'm glad I did, I love it. It has great flavour without even adding other flavours. Aubergine is really a berry but we class as a vegetable and it's native to South East Asia. First time cooking I used it like bread, and made a breakfast sandwich/wrap

Cooking instructions

* Step 1

I sliced some skin from the side of aubergine then I took off 3 thin slices and put in lightly sprayed wok to fry.

* Step 2

Then next to them I had a whisked egg and added half through a metal ring so it didn't spread. Then topped 1 slice with the ham bacon cheese.

* Step 3

Then transfer to plate and add egg omelette on top then put another since on top.

* Step 4

With the other side I poured the other half of omelette on it and turned until covered an browned like eggy bread.
