Chorizo scaled cod with a tomato and courgette sauce

An exam dish I done at college can be refined will do it one day when I get the chance :)

Ingredient

Cooking instructions

* Step 1

For this dish you can cook your dish a number of ways but because your using the scale technique you want to bake the cod, put your fillet on parchment paper and decorate with the chorizo scales leave in fridge until ready to cook.

* Step 2

The sauce! When making the sauce you wanna stew down the tomatoes for a good 5 minutes to they really break down add the garlic onions, some diced up chorizo its all about making this dish your own!

* Step 3

Leave the stew to just sit for a few minutes and prep some courgette pieces cut them in what ever fashion you would like then put them in the oven for about 2 minutes

* Step 4

Put your fish in the oven on about 190 for about 7 minutes this should leave your fish still nice but it will continue to cook slowly not overcooking and drying out the fish.

* Step 5

Plate by making a circle of sauce and placing courgette pieces around it then place the star of the show! (your cod in the middle)
