Gluten-free Oats Blueberry Muffins / cupcakes with Flaxseed

#rakhi #cookpadindia This a delicious totally Gluten-free Oats Blueberry Muffins and Eggfree too. It has the goodness of flaxseed and olive oil. It is good for people with health issues. Everyone wants to do "Muh Mitha " on special festivals and celebration but some are restricted due to health issue, this muffin is specially created for such brothers and sisters, so that they are not deprived from having sweetdish on the special day.

Ingredient

2cups/ 160 gms

Quick OATS (flour)

1/4 Tsp

Baking Soda

160 gms

Blueberry

125 gms

Sugar

1/2 cup

Cooking instructions

* Step 1

Preheat the oven at 180°. Grind the flaxseed and take two tablespoons in a bowl and add 6 tbsps water and mix well. It will become gelatinous

Grind the quick oats into flour in mixer grinder. Sprinkle some on the blueberries too. Mix in salt, cinnamon powder, baking soda and powder and mix it so that everything is thoroughly distributed.

* Step 3

Take a big steel / plastic bowl, pour the flaxseed mix in it, add the brown sugar and mix and whisk with a hand whisk, then add the Olive/ Canalo oil and mix then add the curd and whisk again. Add the vanilla too. Then fold in the oats flour mixture also into it. Once it forms a smooth batter fold in the blueberries too.

* Step 4

With the help of a scoop or paddle pour batter into the muffin tray with liners (If not using liners, grease the tray and sprinkle some oats flour in it). Top with more berries if you like. Bake it for 20 minutes or until your muffins are done, insert a toothpick or skewer in the centre of the muffin, if it comes out clean that means your muffin is done. Take it out, let it be in the tray for 5-10 minutes, then keep it on a wire rack and cool it further. I love it when it's still warm ☺. Enjoy !
