#keto Ketogenic diet or simply KETO diet is a high fat, moderate protein and very low carb diet. Ketosis is a metabolic state in which your body uses fat for fuel instead of carbs. It is a useful diet for weight loss and has benefits for a wide variety of different health conditions. Foods high in Carb should be avoided. Hence there are list of grains or startches- rice, wheat,cereals- oats , beans, legumes, fruits except some berries etc. to be avoided and somethings which can be had in limits and some which should be included in diet to follow the keto diet- meat, eggs, avocado, full fat dairy products, healthy oils, nuts and seeds etc. It would be advisable to follow diet under a trained nutritionist. I am sharing this Malay Makhan/ Malaiyo/ Daulat ki Chaat / Nimash recipe which in my opinion can be eaten by persons on keto diet when you have the craving for dessert as it is churned out MALAY / Milk cream from full fat milk and has fat and protein too and limited carb in form of sugar.....Yes, you can still have sugar , but make sure that sugar combined with all your other sauces of carbohydrates stays below your threshold of about 50 grams a day or replace with Stevia. One dessert many names !!! It's a winter dessert but now with the invention of the Fridge it can be relished any time of the year!!! I add everything before hand and just churn when it chills and garnish it with pistachio and sometimes edible silver leaf.

Cooking instructions

* Step 1

Boil the milk and add in the saffron and simmer the milk till it reduces by almost half, stirring it occasionally...then add sugar, Cardamom and simmer for few more minutes and let it cool at room temperature. Cover and keep it in the fridge overnight.

To keep the chilled milk cool all time while we churn the MALAI out of it....put some chilled water or ice cubes in a bowl and keep the chilled milk pot in it, be careful to select a bowl in which the pot fits well. Now with the help of an electric stick hand blender churn the milk, the milk will start becoming frothy and the MALAI will start collecting on top of the milk. Churn it for about 5 -10 minutes till the Cloud of frothy MALAY becomes dense.

With the help of a spoon, put the Churned frothy MALAI in individual bowl, garnish it with edible silver leaf and pistachios and serve it immediately. If not consuming immediately keep it in the fridge otherwise it will start becoming runny...it is best when eaten fresh!!! Bon Appetite!!! Don't throw away the flavoured skimmed milk make different recipes with it.
